i've been cooking like a mad woman!
well, maybe not so much mad, but i've experimented more this week.
I bought a bunch of random things from trader joe's that i normally wouldnt buy. I'm pretty predictable when it comes to my groceries but this time I decided on some portobello mushrooms (whole), foccacia bread, lettuce, etc.
first recipe:
double-decker portabello buffulo burger delight
1 whole portobello mushroom cap
1 buffulo beef pattie
some chopped onion
1 foccacia roll
3-cheese
3 pieces green leaf lettuce
japanese mayo, some ketchup
over the stove top, on a pan heat olive oil high for 1-2 minutes. lower the heat to med. season portobello (salt+pepper) dump in the buffulo patty and portobello at the same time. Portobello's are nice cause you can cook 'em like a steak. they're shrooms like no other. Estimated 4 or so minutes each side but if you cook, you'll know how to feel your food. Baking is the science, which I haven't done.
throw in the chopped onion 2 minutes before finish, any sooner and they'll overcook/burn! During the very last minute I like to flip my portobello cap-side down, so as to melt some three cheese onto that baby. Melt 'em good.
Also would be good to toast the foccacia bread, fold the lettuce to place, warm it a bit on the bread. Mushroom and Patty should be done. Grab spatula and pick up the patty to press on top of the shroom. Then gather the onion and slather on top of the patty.
Carefully pick up the Shroom-patty-cake concoction and into the bread. Do the ketchup and mayo as needed. Its sloppy, (cause its too huge for my bite, at least...this might be a man's meal, or whomever's got a big mouth) but delicious!

second recipe:
cajun catfish omelette
1/2 filet catfish
3 oz. chopped onion
3 pieces green leaf lettuce
2 eggs
repeat the previous cajun recipe for my catfish.
heat high olive oil, lower the temp to med. fry em up. add the onion 2 minutes til finish. Add the lettuce 1 minute til finish. set everything aside, strain the oil from catfish.
Clean the pan, heat the olive oil on high for 1 minute, then set it low heat.
Usually, I like my omelettes really thin, like a crepe. And a little bit rare on the inside, melty. My eggs cook no more than a minute, then i fill it up with fish n fold.
Its excellent with rice!
